Extra Virgin Olive Oil 2 Stalks Celery (diced) 1 medium size onion (diced) Clove of garlic ( peeled & sliced) 1 medium size apple (cored and diced) Boneless Pork Chops (¾ inch thick) Stale bread slices ( 6-8 slices) Ground Sage Lemon & Pepper Seasoning Poultry Seasoning Apple Cider/juice Mrs. Dash seasoning
In large cast iron skillet, over med high-heat, heat tbl olive oil; add celery, onion, garlic, and ½ of diced apple, stir, cook until onion is clear, remove from skillet.
Season both sides of meat with lemon & pepper; add tbl oil to skillet, brown meat for 2-3 min, stir so they don’t stick, add 3 oz water, reduce head, cover and simmer until liquid is gone. Turn meat, brown on second side, add 3 oz water, cover and simmer ‘til liquid is gone. Remove meat from skillet. Let skillet cool down slightly.
Tear bread into one inch pieces and place in a bowl. Sprinkle bread with 1 tbl of ground sage, mix: sprinkle bread with ½ tsp of poultry season, mix: add cooked onion, garlic, apple, & celery mixture to bread, mix: add rest of diced apple, mix: sprinkle some Mrs. Dash (to taste) in and mix: Sprinkle 3 oz of cider/juice (or water) into bread and mix.
Spread bread mixture evenly in bottom of skillet, place meat on top of mixture, sprinkle 1 oz of cider/water over skillet, cover and bake at 325 for 10 minutes. Remove cover, bake an additional 5 minutes.
Serve the chops and stuffing with your favorite hot veg, fresh cole-slaw, and a side of apple sauce (NOTE: If you want a slightly different flavor, when simmering meat, swap beer or wine for the water)
