1 c. finely chopped and pared apple
1/2 c. chopped onion 1 clove minced garlic
2 Tbsp. cornstarch 2-3 tsp. curry powder
3/4 c. cold chicken broth 2 c. milk
2 c. diced cooked chicken
In saucepan, melt butter; add apple, onion and garlic. Cook until onion is tender. Combine cornstarch, curry and 3/4 tsp. salt. Add broth. Cook; stirring occasionally until mixture bubbles and begins to thicken. Stir in chicken. Heat throughly.
Serve over hot rice.
