2 tablespoons olive oil salt & black pepper to taste
1 teaspoon mixed dried herbs
Method:
Pour olive oil into a skillet (I use an electric frying pan), place over medium heat, and add onion and garlic. Cook until the onion is softened. Add all the other ingredients. Cook over medium heat, stirring occasionally, for about 20 minutes. (I like to add a splash of wine, halfway through cooking)
This simple, healthy meal can be served as a main dish, or as a side dish. It goes well with roast meat or chicken
