Clean the onions - do NOT cut. String the beans - do Not slice. Boil beans and onions together in salt water till cooked.
Prepare the following sauce:-
Beat the eggs, sugar, vinegar together with salt and pepper. Stir this mixture constantly over low heat until it thickens -- do NOT boil as it will curdle. Strain onions and beans. Place in a serving dish and pour sauce over.
This can be served as a hot vegetable or cold as a salad, and is a very popular South African dish.
