1.Soak dried apricots in just enough water (or orange juice) to cover fruit for at least an hour to soften.
2.Heat apples, onions in saucepan or pot on low-to-medium heat until slightly softened.
3.Add apricots (including soaking liquid) and remaining ingredients; bring up to simmer on medium heat; lower heat and simmer for 1 hour uncovered.
4.Store in airtight, sterilized container in fridge.
Note:
I used a Pink Lady apple but if that’s too sweet for you, use a Granny Smith or some other green apple. You may also just add ½ cup apple juice instead.
I made-do with a pickled green jalapeño.
You may add all the ingredients together – just allow for extra cooking time.
