Thai-style Salmon Cakes

Ingredients

  • 2 cups (650g) sweet potato or kumara, cooked and mashed
  • 2 tbsp Thai red curry paste
  • ½ cup coriander, chopped
  • 415g can or tinned pink salmon, drained
  • 1 tbsp coconut or vegetable oil

Serves 4

  1. Combine mashed sweet potato, salmon, red curry paste and coriander in a large bowl, season with pepper.
  2. Shape into round patties.
  3. Heat oil in frying pan over medium heat and cook patties for about 4 minutes on either side until golden brown.
  4. Serve with Thai sweet chill sauce, accompanied by steamed jasmine rice with cucumber or green salad.
